Mint Cookie Brownies!

When I first arrived back home I worked as a cook at a girls co-op on campus. I threw these together and the girls all loved them. I have to admit they are very delicious!


1 cup butter softened

2 cups sugar

4 eggs

3/4 cup baking cocoa

1/4 tsp. salt

1 level cup flour

crushed cookies–Mint Oreo cookies crushed


Preheat oven to 350 degrees

Prepare large baking pan by greasing and flouring.

In a mixing bowl, place butter and sugar, mix until fluffy, add eggs one at a time and mix well. Turn mixer down and add cocoa. Mix until well incorporated, add salt, mix. Add the flour and mix well.


Using a spoon mix in 1/2 cup cookie crumbs.


Spread onto baking pan and put in oven.


Let bake for around 30 minutes.

When done remove from oven and cool completely.



5 cups powdered sugar

1/2 cup butter softened

1/2 cup milk

Mix sugar and butter on low and add milk, mix until fluffy.

Spread onto cooled brownies and top with cookie crumbs.

  1. Oooo Lynz, mint and chocolate, after peanut butter and chocolate. You’re hitting all my favorites today. Just stick some caramel in there and game is over, we have won the season. My baking is suspended until I move down the hall — in 9 days and 15 hours. But who’s counting?
