This is a quick and delicious breakfast sandwich that I threw together when we lived in Saudi. It seems silly to even post it as a recipe, but it is one of our quick breakfast alternatives and I thought of it when we made it yesterday! So here it is!ย It combines eggs, turkey bacon and cheese on a croissant. Very simple and delicious.
Ingredients
4 croissants
4 eggs
8 Pieces of turkey bacon cooked according to package directions
cheddar cheese
Directions
Preheat oven to 300 degrees
Place croissants on baking sheet, put cheese on each croissant and
place in oven to toast and melt cheese.
Cook bacon until done
Scramble eggs or make them omelette style
Take croissants out of oven. Place some eggs on each croissant and top with bacon.
Put other half of croissant on top of sandwich

I buy those large trays of croissants at Costco, bundle two at a time and freeze. We had turkey sausage and eggs this morning in ours. At least it was some what healthful using the turkey sausage ๐

I had an egg sandwich with half a pita bread this morning. I’m watching my calories so skipped the cheese, but the turkey bacon wouldn’t have added to many more calories. I should pick some up when next at the market b/ c your sandwich sounds better. ๐

We make these kind of sandwiches often too but usually on a bagel or English muffin. I love it on an onion or sesame bagel. ๐

ha ha well they have many middle eastern bakeries of course but I never found a really good Western style bakery! I had a bakery when I lived on a compound, I mean people asked me to make stuff and I did it!! It took hours and I finally said no more. People on compounds often help out by doing different jobs like that!
