One of my most favorite foods in the middle east is cheese bread! What is cheese bread? It is Arabic bread with an amazing cheese baked on top of the dough! Most shops have their own mix of cheeses and it is just amazing! When we moved back to the states 6 years ago I didn’t cook much authentic middle eastern food. I held three jobs and had to support our family. After a couple of years I started cooking again and realized we didn’t know how to make cheese bread, it was something you grabbed at the corner bakery. We tried to make this bread several times and we finally liked the mix.
Ingredients for topping
2 cups ricotta cheese
1 cup crumbled feta cheese
1 cup mozzarella cheese
2 Tbs. Fresh chopped parsley
1/2 tsp salt or to taste
Bread
One batch of Arabic bread–see recipe
Directions
Make the Arabic bread dough recipe, let it raise.
When it raises roll it into balls as per the instructions.
Cover it and let it rest for 20 minutes.
Preheat oven to 400 degrees
Mix all topping ingredients and put in refrigerator.
Roll each ball into a circle as if you are going to make Arabic bread.
Spoon some cheese mixture on the bread circle and gently spread around. Work carefully, you do not want to make holes in the dough or press down too hard and make it sticky.
Put in oven. I put this on the bottom rack and bake for approximately 7 minutes to crisp up the bottom of the bread, then I move to a higher oven rack. Let it cook another 15 minutes or until done. If you make bread then this whole process should be fairly simple.
Remove bread from oven, cut into pieces and serve.
Very tempting, yummy. Love anything with cheese

I shall make this. What is really interesting is that the cheese mix you use is the same as I use for Khachapuri (the Georgian bread which is the stuff of dreams) … it took ages to find the right blend to repicate the unobtainable local cheese.

mozarella is what you put on pizza and ricotta is a soft cheese you can actually spread it.
