This is a rich and wonderful recipe I have used for years for Fettuccine Alfredo. It is creamy and lovely. I whip this up as a quick, busy day meal or add herb encrusted, garlic chicken and broccoli on the side.
In Saudi you cannot get fresh cream and it is very different than the cream we find here in the refrigerated section of the grocery store. I learned the hard way that there are also two varieties, regular and sweetened. As I ran through the store with babies and toddlers in tow, a quick trip to the neighborhood store, I grabbed some cream, paid and ran out the door. I made this simple version of pasta as I had tons of times before. When I served it I saw faces that went from a lovely anticipation to confusion and possibly disgust!!! They told me that it tasted like a strange dessert with pasta and garlic! I looked and realized I had purchased sweetened whipping cream which I had never seen prior to this experience. Try as I may, I was unable to spice this up and save the meal! So, we had grill cheese sandwiches!
Ingredients
2 cloves garlic peeled, washed and chopped.
1 stick butter
2 1/2 cups whipping cream
2 cups Parmesan cheese
One package Fettuccine noodles
1/2 tsp. dry parsley
Directions
Put butter in medium size sauce pan, turn on low heat and melt. Add garlic and saute. Add cream and whisk well, add cheese, mix and continue cooking. Let cook on low heat until all ingredients are mixed well and sauce simmers. Add parsley. Turn off heat.
Cook pasta and drain.
Toss with sauce and season to taste

Fell asleep, woke up, went shopping, read more blogs. It’s almost midnight and I’m now watching The British Open as I type this message. I’m obviously avoiding finishing the post because I have to hassle with getting the photos from my IPad to my Mac Air and then into my media file. Always a chore for me. This is supposed to happen automatically, but it’s not happening. I will overcome this challenge, but I may be up late tonight. On the brighter side – I wrote a song about cheese and will include it in a later post.

yes exactly!!! they have beef at western type stores, but no usually lamb in syria and saudi. Beef is so expensive in Syria!

This sounds so simple and yummy! I love fettuccine but have never attempted it at home.. I’ll have to try this recipe. Any suggestions on what type of whipping cream works best? Also, do you use regular or unsalted butter? You have to put up a recipe of the chicken version of this dish :p

we have here heavy whipping cream in the little carton usually with the milk? I use either kind of butter, whatever you use is fine. I will try to get the chicken, I put basil, garlic etc.! Thanks dear! any questions let me know.

How funny. This reminds me of a similar story. I was probably 17 or 18, and had never done any cooking. Was put in charge of two boys during the day, while their parents were in Europe and their elder siblings were working. I decided to make a pizza – from scratch. Rolled out the dough on the pull out cutting board, decorated it artfully with meats and a lovely, white cheese which I’d found in the jammed to the gills, gourmet refrigerator. When the pizza was ready for the oven, I began to attempt to lift it from the cutting board. Of course, it was stuck fast – as I had not known to dust the board with flour. Yes; that. So, again, feeling most resourceful and imaginative, I scraped half of it over onto itself to form a huge calzone – and, slid the whole football into the oven.
When the boys got home, we all sat down to eat. Two bites in, their grimaces told the tale. I’d used that lovely cheese, alright – Havarti, imported from God knows where, probably Norway?! The whole thing tasted like sour milk and, because it had been calzoned, the cheese had infused the entire concoction and couldn’t be peeled away. The whole creation had to fall wholly into the garbage!
Alfredo, and that whole stick of butter. So glad you have several family members to share in it …..I’d eat the whole recipe, and my arteries would seize!

Gosh what a quick and simple way to make pasta with a cheese sauce! You could add some crispy bacon lardons and make a quick and easy carbonarra I am definitely going to do this x

what a funny story! I love reading about awesome dinner experiences but you know, once in a while, it’s good to also hear that things don’t always go as planned and that one can always count on grilled cheese (or a peanut butter and jelly sandwich in my case).

Do you use shredded cheese? It looks like it from the ingredients, but I thought from the directions I might be able to use a block without shredding.
Also, I totally bought all the necessary ingredients for the peanut butter pie. I assume I should direct any complaints about my expanding waist line your way?

One of our biggest sellers, only difference was we added nutmeg, just a sprinkle….and in some instance an egg yolk is added at the very end to make it more creamy…but personally I never use the egg yolk…not an egg fan….kat
