My daughter worked at a restaurant when we first moved back to the United States. This dip was a common appetizer served there. Foof does not like eating at restaurants and so she set her mind to figuring out the best way to make this. We came up with what works well for us and combined the idea of several recipes into what we like.
Ingredients
1 — 14 ounce can Artichoke hearts
1 cup low fat mayonnaise
1 cup whipped cream cheese
2 cloves garlic minced
1 1/2 cups frozen chopped spinach
1 cup shredded mozzarella cheese
1/2 tsp. salt or to taste
Directions
Preheat oven to 375 degrees
Put cream cheese in a bowl and mix well, add mayonnaise and continue mixing. Cook spinach according to package directions. Drain and chop artichokes. Add artichokes to cream cheese mixture, add garlic, mozzarella cheese and spinach. Fold this all together and pour into a casserole dish or pie pan.
Place in oven and let cook until bubbly, approximately 45 minutes. Remove from oven and serve with chips or crackers. Very hot so be careful!
Timely recipe! I am thinking of making this for Thanksgiving day. We do appetizers on Thanksgiving and the big dinner on the weekend when we have more time. I will try this this next week!

I can’t stand mayo so would have to find a way round it – maybe lemon and cream … its a crazy thing with me – I am odd about gloop and mayo is gloopy. The odd thing is that I love soft creamy foods just not condiments added at the end. Weirdo my girls say 😀

I think you could easily add anything else? One recipe we tried used an alfredo type sauce! so I am sure another alternative! I no longer eat this dip just a bite because of my high cholesterol which I am treating by diet and exercise!

I have graybeh which is like an Indian type cookie I have seen on many blogs. It is made with a nut on top. also basbousa but not a tried and true recipe! so I hate to just tell you any recipe I have from years ago. I can get the graybeh recipe from my daughter but it might be too similar for you! Of course roz a halib but that would be hard for a stall!

when we fist arrived here we ate out all the time….. freedom. but then we all said enough!! so we started doing our home cooking again! So much fat in outside food and I have high cholesterol!! so really I can’t eat hardly anything at any restaurant!

Being the daughter of a former Restaurant owner it is hard to tell you I do not care for Restaurants generally and fast food is a never in my household! We are what we eat! I say hooray for cooking at home with the freshest ingredients we can get!

Yes for sure! In saudi I only used fresh tomatoes in my sauces, blanched and peeled them etc. made homemade puff pasty dough! I am now 53 so have slowed down a bit!! it takes a bit of whining to get some of those old things done!! 🙂

LOL yes I know. I cook/bake 7 days a week plus homemade snacks, etc. In the long run my efforts will pay off for my family!!! I do love doing it Lynz as I know you do too!

Hi Lynn, I have never cooked or tasted an Artichoke ! I have seen them periodically in one or two of our food stores, but never knew quite, what to do with them. Guess I must try….this does sound really tasty :-). Have a lovely weekend x

I love the sound of all the ingredients in this, Lynn, and think it would be perfect for lots of occasions, or when a buffet is served. I love the idea that many of these recipes have been adapted, added to and improved by your own choice of ingredients. It makes them so much more interesting and appealing.
