Living in the Middle East and being part of a family with Middle Eastern heritage, usually means eating fresh vegetables and foods. In Saudi Arabia, fast food has really taken off in the past 20 years. Unfortunately many locals eat way too much fast food and are not advised of the health risks. When we first arrived in Saudi, there were hardly any fast food places, but when we left it seemed as if they were on ever corner! For us, we went once in a great while and so when we arrived back to the states we ate allot of fast food. It was like a forbidden treat for all of us! After a year of that, the older children said no more! They were not raised eating processed food and so we started back to cooking fresh! As I have mentioned Foof eats out and then tries to recreate what she has eaten at home. It is cheaper, fresher and you can modify the ingredients to cut down on fat. After eating a Panini type sandwich the girls asked me to make it at home. We really enjoyed this, hope you do too.
Ingredients
5 Roma tomatoes chopped
1 onion chopped
3 cups fresh spinach
1 tsp. dry basil
salt to taste
olive oil for sauteing
grated mozzarella cheese
pesto of your choice
1 package Panini buns
Directions
Put a few spoons of olive oil in a pan and add onions and tomatoes. Saute until soft, add spinach and continue to saute. Add basil and salt to taste.
Preheat oven to 300 degrees
Cut buns open and place on baking tray
Spread pesto on one side and mozzarella on the other side of the bun
Place in the oven for approximately 5-10 minutes or until a little toasty.
Remove from oven and spread tomato mix on bun. Close bun and serve.
I also put a little turkey on the bun for those who want it.

I am happy for now, I started back up again and feel less nervous. I just stopped and decided no not working. But now feel better. I worked as kindergarten teacher, now today special ed. So, for this year just here and there. Then next year hoping part time like 20 hours. I also went to the dentist, doctor, just all day not home! xxxxxx

Looks so delicious and only a couple of ingredients. I like most that it is a vegetarian choice… I always try to have only veggies at least a couple if times in the week and this panini looks great!

Hey Lynn. How are you? Just got busy with my baking class so unable to say hi or comment on your blog. This recipe is something my type of recipe, easy quick and I can make out that it will be delicious. I real like how you have added spinach into it. But can I try this sandwich on sub bread because I am not aware of what Parini bread is.

Hey Lynn, I have started a baking class for Ladies and kids. Every week I conduct baking class where I teach them the techniques of baking cakes, cupcakes and more baking products. It is fun. I can able to interact with different people who got keen interest on baking. I just turned by hobby into a hobby class….. 🙂
