This is very simple but a yummy variation of eggs. My kids love these eggs and they go great with Arabic bread.
Ingredients
2 eggs
1 tbs. fresh chopped parsley
1 large clove garlic, peeled, washed and sliced
1/8 tsp. Salt
2 TBs. olive Oil for cooking eggs
Directions
Crack eggs and place in a bowl, stir well, add salt and fresh parsley, stir.
Use a frying pan, put enough olive oil to lightly cover the bottom of the pan, add
garlic, saute one minute, turn heat up and when it’s hot add eggs.
Let them cook a little and each time slide cooked eggs to the side and let uncooked eggs cook, until all eggs are cooked, much like making an Omelette.
When they are done, you can use a spatula to turn them and continue cooking, but in the Middle East you basically flip them ( which can end in disaster if you don’t know how!) until cooked on the other side as well.
Slide onto a plate. Yummm!
Love eggs. I’ve had them seasons a million ways. I’ve made this. It’s interesting how many foods are the same no matter where you are from. 🙂

This looks simple and delicious enough I could try it out. I am a little intimidated in the kitchen, but Bumbi is loving eggs in the morning so this will be good to try with her.
