This is another delicious egg dish. After living in Saudi for a couple of years, a sweet Saudi lady had me for breakfast where she made these eggs. I asked her for the recipe and years later my daughter makes them all the time.
Ingredients
3 eggs
3 Roma tomatoes chopped
6 cloves fresh garlic chopped
1/4 cup chopped onion
3 Tbs. Olive oil for cooking
Salt, 1 tsp. Cumin
Directions
In a large fry pan put olive oil, add onions and garlic. Saute for 5 minutes, add chopped tomatoes, 1/4 tsp. salt and 1/2 tsp. cumin. Cook until tomatoes break down and it’s saucey.
Crack eggs into bowl and whisk, add salt and a 1/2 tsp. Cumin ,whisk well.
Turn tomato mixture on medium high and add eggs. Stir to scramble eggs. When eggs are done remove to plate and yumm!
Looks so yummy! Never tried eggs with cumin but now I will!
